{Recipe} : Freezer Breakfast Burritos!

Honestly, lists are amazing!

I accomplished 3 of my 4 goals for the week and it's only Wednesday!! Woo-hoo! Yesterday, I replaced our stove lights (took 20 minutes to find the light bulbs at Target!!!) and started my recipe book! Today, I took Eugene to school and spent the day with my mom and my sister chillaxing, eating, walking around in the sun and shopping. It was so sweet! I took a two-hour nap at my mom's place, so when I got home today I was so well rested that I decided to make my breakfast burritos! 

This was surprisingly very easy and way quicker to make than the freezer burritos I made a few months ago. Freezer burritos are great when you're really busy and you need food on the go. Because our busiest and most rushed times are in the mornings nowadays, I figured breakfast burritos would be a good idea! So off we go!

First, gather your ingredients!


Chop, chop, chop! Mr. Milk meets the bowl of eggs. 

Sausage cooked, egg scrambled and tortillas warmed.
All ready to gather into a perfect little breakfast burrito!


Rolled up as tight as you can! This is the hardest part!


Individually wrap with foil and freeze! {the last one didn't fit.}


Next time I'm gonna try making them bigger. These were pretty dinky... but portion control's good, right? :)

Freezer Breakfast Burritos

Cook time: 30 minutes
Makes 8 servings

1 pack large or extra large flour tortillas
6 large eggs
1/3 cup low fat milk
1 Tbsp butter
1 medium tomato
1/2 large onion or 1 small onion
1/2 cup cilantro
1/2 cup mexican cheese, shredded
6 breakfast sausage links, casings removed
olive oil
black pepper

1. Chop all the onion, tomatoe and cilantro into small pieces. {simple salsa} 
2. Take the sausage meat out of the casing. Toss the casing!
3. Pepper the sausage and mash it up with your hands with your hands. Heat up a fry pan with some olive oil and cook the meat until browned. Set aside.
3. Use the same fry pan and add the butter, whisk your eggs and scramble until fully cooked. 
4. Wrap tortillas in wet paper towels and heat up in microwave for 20 seconds (3 at a time)
5. Put a spoonful of eggs, sausage and simple salsa in the middle of your warmed tortilla. Sprinkle cheese.
6. Wrap burrito {see picture below} and individually foil.
When ready to eat, remove foil and wrap with moist paper towel. Microwave for 1 1/2 minutes on high power, or until fully cooked.. Cool and enjoy!

** Update: It was delicious! Make sure to give the wet paper towel a good squeeze so the burritos don't get too soggy and only microwave for 1 1/2-2 minutes. Wait for them to cool, they're HOT! :)

bright eyed and bushy tailed.


Good morning, world! It's a beautiful day!
 I just finished my last night shift until Saturday and I am super excited for my days off! (YIPPEE!!) Our home is always a little chaotic after I have a long stretch of work, so it's kind of hard for me to not stay up all morning getting things done when there's so much to do!

Here is the nature of our place at the moment:


dirty dishes to be washed. clean dishes to be filed. counter tops to be wiped down.


dust bunnies gathering under the dining table.
scattered chairs and a random jumble of things on the table.


I have alot of things planned for these next few days: study dates with Eugene, a trip to LA to hang out with my mom (after I drop Eugene off to school), a few lunch plans and a whole lot of errands. The laundry's going now, the dishes are soaking in the sink waiting to be washed in the {hopefully} near future and I've made a long list of tasks that need to be done in these next coming days! (which includes trips to Target, Costco, Ikea and the dry cleaners!) womp womp.

I wanted to set some goals for this week! Hopefully this will help me accomplish a few things I've been meaning to do for the past few months, despite the million little things I want to do!

So here are my goals for this week:

1. Make a trip out to Ikea!
(Can you believe the last time I went was when I was little enough to play in the play place?)
2. Make Freezer Breakfast Burritos (I'll post the recipe too!)
3. Replace the stove lights (they've been out for almost 4 months now... )
4. Start a recipe book to store all my tried and true recipes!

I seriously love lists, and I hope this will help me be productive during my days off!

everyday life - update (pt. 2)

So I've really been doing bad at updating these weekly, but here's a quick recap of the last three weeks. It's been crazy with Eugene starting school, and us trying to figure out or schedules. These past few weeks have been filled with packing lunches, shopping at trader Joes, riping avocados, eating cookie butter, studying medication cards and writing our wedding thank you's. (after 10 months... yipes!) 

It's been a good transition for us so far! Eugene's getting the hang of school and studying really hard already (so proud!) and I'm busy trying to figure out how to make different types of sandwiches and prepare quick dinners for my little pharmacy student. It's been wonderful. It's been really nice having more of a routine in the house and having more things to do during the day. I'm trying to learn how to keep the house clean on a more regular basis instead of having a major spring cleaning 2000 extravaganza every few weeks... i'm still learning, but we'll get there sometime soon! Life's been sweet and we've been loving every bit of this transition. All by God's grace!

So here's what our lives have looked like..

I've been trying to eat healthier at work so I've been packing my lunches more often. Although it's alot of work at times, it always helps me power through the night better since I dont have french fries sitting in my stomach!

 

One day, I woke up from my nap after work really craving french toast. So random! It was still pretty earlier in the day and I had only gotten a few hours of sleep, so Eugene forced me to go back to sleep and I woke up to the smell of home-made french toast from the best husband ever!!


Eugene and I took a few trips to LA to prepare for his commute to USC and here we are waiting at a bus stop! :)


and here we are during our 3-hour wait at the EXTREMELY hot Union station. Eugene slept while I watched Grey's Anatomy on my phone with some really slow internet. Sheesh!


I have become a trader Joe's junkie. I go shopping there every few days for groceries and snacks. This day I enjoyed making dinner with some mushrooms in a box. So fancy when they come in a cardboard box!


I haven't been sleeping well during the day before work because of how wonderfully sunny and hot the weather has been. One night, I went to work with 1.5 hours of sleep only. It was really bad. I had to fight so hard to stay awake and everytime I would blink, I felt like there was glue on my eyelids keeping em shut. I was so excited to come home to sleep, and according to my phone alarm app, I slept pretty well.


Eugene's on his first week of classes at USC and it's been so exciting! He spends hours everyday studying these little prescription cards. It's so cute! He even asked me to go to the store to buy more index cards for him yesterday. :')


Visited one of my favorite co-worker/friend at home since she's on maternity leave. So excited that when I come to day shift, I'll be working with her! 


 Last Friday was Eugene's last free day before school starts so we planned to go to Disneyland since we were FINALLY not blocked out. We were all ambitious about staying all day and we only ended up staying for two hours. Poop, we're so old now.


We left Disneyland early to have lunch and we made it just in time for some Dim Sum!


I got my labs drawn two weeks ago and my doctor says that I have a Vitamin D deficiency. (which probably explains my fatigue and sucky immune system..) so she recommended me to take lots of Vitamins. Good thing I'm married to a pharmacist-to-be who reminds me to take em everyday!


One of my (and Eugene's) favorite Trader Joes finds! We're addicted..


Finally starting on these. I'm the worst bride ever! If you get our cards, please don't judge us.. :)

My Pharmacist-to-be.

Yipes! Sorry for the lack of updates.
We've already come to the end of August and we've been busy bees tying loose ends before Eugene's first year of Pharmacy School. We've been training our bodies to sleep earlier and wake up earlier (on his first day of school, we woke up at 4:45am!), test-riding trains, and buying school supplies. Eugene just finished his first week of orientation and will start classes next Monday. Today was his white coat ceremony. So exciting!

It's funny because Eugene came to MY white coat ceremony when I started nursing school and took an album full of pictures for me to give to my family. We were just friends then. Oh how far we've come!


Who knew that three years later, I would become his wife taking picture at his white coat ceremony! :)





It's been a long road coming, but God has been so sovereign and faithful in every step of the way. Even though there are challenges ahead of us (i.e. 3 hour commutes/day, stressful days full of studying and long nights we have to spend apart), I'm confident that His grace will continue to carry us through it all and that's more than enough reason to rejoice! His grace has brought us this far..

These next four years will consist of exciting things for Eugene, but it also holds alot of cool things for me as well. Eugene being in school will be an adjustment for the both of us as he'll be away more often than usual. But as difficult as this transition will be, I'm excited to learn how to specifically serve Eugene in this stage of life. I'm excited to grow as a wife as I learn how to creatively serve Eugene, even if we can't be together as often and I'm excited to see how God continues to shape Him into the man he was created to be.

Today I was so proud to be Eugene's wife. I don't know what lies ahead of us, but I know that by God's grace He'll enable us to be victorious!

everyday life - update

So, I totally failed on this everyday life post and didn't post since week 22. This was officially week 31, so I'm a wee bit behind. Please forgive! I thought I'd just show small snippets of what happened in the many, many weeks I missed. I hope to continue my weekly "everyday life" posts again starting next week. I'll keep my fingers crossed! but for now, enjoy!

Summer Vacation!

I'm officially on my summer vacation!

With Eugene starting school in less than a month, I decided to take some time off to spend extended time with Eugene, so I have 8 full days off (Yippee!). We don't really have anything planned as of now, but we'll see where our hearts take us. Today was spent running errands, cleaning, doing a few loads of laundry, clearing out the fridge and some more popsicle making. We also bought a printer to celebrate Eugene's new beginning! It was like his birthday all over again!

Eugene is busy setting up his brand new printer in his brand new study room while I'm scurrying around trying to pick things up around the house. The smell of strawberry basil infused lemonade still lingers in the house and we're enjoying a quiet day at home.

Thankful for this quiet and stress-free season at home!
Embracing every moment until the craziness of pharmacy school begins...

Eugene turns 24!


Last week we celebrated Eugene's 24th birthday and toasted to a new year with some close friends, steak kabobs, windy weather and a strawberry trifle. It was a sweet time of celebrating Eugene's life and God's faithfulness to him in this busy, busy year of changes! During Eugene's 23rd year, Eugene became a husband, finished his 2-year pharmacy tech career at CVS and became a pharmacy student. God is so good!

I really don't need any occasion to celebrate Eugene or feel incredibly thankful for him, but birthdays always give me an opportunity to brag about him and embarrass him, so I'll take any opportunity I can get! So to celebrate his {belated} birthday, here are 20 things I love {slash-- learned to love} about Eugene.

1. I love the horrendous amount of sweat you produce when you run, and how you chase me around the apartment forcing me to touch your shirt to see how wet it is.

2. I also love how you hang said sweaty clothes on chairs to dry before throwing them in the laundry hamper.

3. I love how much you love Chicken Katsu and Curry and the big hugs I get every time I prepare it for dinner (and the extra hugs I get when I let you have second, third, fourth servings..) 

4. I love how much you love green things.

5. I love our target runs and how I always end up losing you somehow, only to find you hanging around the electronic section.

6.  I love your white shirt and jeans. and how I mentioned to you one time that your white shirt and jeans outfit was my favorite and you bought like 20 new white shirts the next day. {haha!}

7. I love coming home to you after a long night at work; even if you are still delirious in your sleep and don't give me any attention. :) 

8. I love your obsession with Mcdonalds iced coffees and how you always want to go study/read there instead of Starbucks.

9. but I also love how sacrificially you decide to take me to Starbucks instead since I don't like reading at fast food places.

10. I love how you do a silly dance when you're excited about something and how nobody else believes me that you do this.

11. I love how it only takes you 2 minutes to fall asleep at night and the immediate snoring party that follows shortly after. God was so sovereign in making me a heavy sleeper! 

12. I love that you still love me even when I'm sweaty and flushed and ugly at the gym.

13. I love how you always let me listen to my favorite song "Boyfriend" by Justin Bieber on the radio, only to ruin my favorite falsetto part every time!!!!!

14. I love how excited you are to show me that you did the dishes while I was at work because you know how loved I feel when you are thoughtful that way!

15. I love that you love discounts as much as I do! and how you always ask me before you buy something no matter how cheap it is!

16. I love praying with you and for you and being prayed for by you! It's one of my favorite things.

17. I love how we can talk about medical things during our lunch dates and still make it romantic. I love how we spent almost an hour talking about ACE Inhibitors during our breakfast date a few weeks ago and how giddy and excited we were talking about it.

18. I love how much fun we can having doing absolutely nothing and how we are both the hugest home bodies ever!

19. I love your love for the Lord and how I'm able to witness daily how you strive to live a life faithful before Him. I love how it spurs me on and challenges me to do the same. 

20. I love you just because. Sometimes I don't even know how to explain it and sometimes I don't even really need a reason why. I love you because your my husband. I love you because we made a promise to love each other through sickness and in health, til death do us part. In every season, no matter what the reason, I love you today, tomorrow and forever!


Happy birthday, Eugene! You are the love of my life and I am the luckiest girl ever.
