Rotissiere Chicken Pasta Salad

I love Rotissiere chicken. I love it a whole lot. There's a thousand things you can do for it and it's already perfectly cooked and perfectly seasoned when you buy it and it's so, SO delicious. I got the idea to make this pasta salad after paying $10+ for a tiny tub of it at Costco. It was so light and filling and delicious.. but definitely too overpriced. This recipe is SO easy. It's perfect when you want a light dinner or when you want to partner it with a sandwich for lunch!

So here we go! Gather your ingredients--


Chop your artichoke, olives and grape tomatoes


Grab your Rotisserie chicken! Skin it and shred it up..


Cook your pasta and drain; let it cool in some cold water.


Mix it all up and add the italian dressing and feta cheese. Add some black pepper to taste.


then..voila~ Rotissiere Chicken Pasta Salad!


Rotisserie Chicken Pasta Salad (Serve 8)

1 Rotissiere chicken, skinned and shredded
1 Box of Pasta (Farafelle or Rotini work best)
1 package of feta cheese, crumbled
1 package of grape tomatoes, halved
1 can of olives, drained and chopped
1 can of artichoke, drained and chopped
Italian Dressing, to taste
Black pepper, to taste

1. Cook pasta in salted water until well-cooked, drain and cool in cold water
2. Drain cans of artichokes and olives, chop them into bite-size pieces. Halve grape tomatoes. 
3. Skin the Rotisserie Chicken and shred into bite-size pieces.
4. Mix the pasta, chicken and veggies together. Add italian dressing and crumbled feta cheese. Add black pepper to taste.
